Course Objective
The course aims to provide basic and applied knowledge about the production of foods, quality control analyzes applied from raw materials to the final product, evaluation and reporting of the findings according to scientific data and the Turkish Food Codex.
Course Content
Designing experimental conditions regarding workflow processes, chemical reactions and spoilage reactions in the fields of fruit and vegetable technology, grain technology, oil science and technology, meat science and technology, fermentation technology and food microbiology, applying them according to the procedure, applying the experimental findings according to scientific data and food interpretation and preparation of reports according to the codex.

Explanations
There will be laboratory experiment reports, one midterm exam, and one final exam.
Exam dates are as announced in the schedule table. The topics of the exams will be announced a reasonable time in advance. Make-up exams will be provided for missed exams within the scope of excuses accepted according to İZÜ regulations.
The final exam covers all topics taught throughout the semester. The date, time, and place of the final exam will be announced by the Dean’s Office.
Rules
Attendance: According to the regulations, if a student attends less than 70% of the total course hours (i.e., exceeds 30% absence), they receive an absentee grade (DZ) and fail the course.
Late Arrival: It is expected not only to attend the class but also to join on time. Late arrival is defined as entering the class after attendance has been taken by the instructor and after the first 10 minutes of the lesson.
Seeking Help: Asking questions about the course during class or office hours and learning the material on time is important for your education. Students are encouraged to seek help whenever necessary.
Academic Integrity: All work that contributes to the course grade is expected to be entirely your own effort. In cases of unethical behavior such as plagiarism or cheating, a disciplinary investigation will be initiated in accordance with İZÜ regulations, and the necessary penalties will be applied.
Assessment Policy: The evaluations specified in this syllabus are fixed, and no additional make-up assessments will be conducted for grade improvement purposes.
Course Learning Outcomes
- Can take samples from food products, collect data through experiments and analyses, and interpret the obtained data (PÖÇ-5).
- Evaluates current issues and trends related to the food industry according to national and international standards and regulations (PÖÇ-6).
- Can define the basic processing techniques used in food processing (PÖÇ-3).
