Course Objective
To understand the chemical composition of food, including changes during food processing and storage.
Course Content
This course is based on the importance of the chemical structure of water, proteins, carbohydrates, lipids, vitamins and minerals and their interaction in the composition of foods.

Explanations
- Devam: Yönetmeliğe göre bir öğrenci toplam ders saatinin % 30’na devam etmemesi halinde dersten devamsızlık alır (DZ) ve başarısız olur.
- Geç Gelme: Sınıfa sadece gelmeniz değil vakitlice saatinde ders katılmanız beklenmektedir. Unutmayın ki 3 derse geç gelme 1 tam devamsızlık olarak sayılacaktır. Derse geç gelme şöyle tanımlanmaktır: Ders hocasının sınıf yoklamasını alması ve dersin ilk 10 dakikasından sonra derse katılmak
- Yardım Almak: Ders esnasında ya da görüşme saatlerinde dersle ilgili sorularınızı sorup konuyu vaktinde öğrenmeniz eğitiminiz için önemlidir. Öğrencilerimizin, gerektiği hallerde, yardım almalarını tavsiye ediyoruz.
- Akademik dürüstlük: Dersin notuna konu olacak çalışmalarda tamamen kendi gayret ve eseriniz olması beklenmektedir. İntihal, kopyalama gibi gayri ahlaki durumlarda İZÜ’nun ilgili yönetmeliği gereği disiplin soruşturması açılıp gerekli cezai müeyyidelere tabii olursunuz
- Bu izlencede belirtilen değerlendirmeler sabit olup, not yükseltme amaçlı herhangi bir ekstra telafi ölçme yapılmayacaktır.

- Explains the roles of minerals and vitamins in foods, their chemical structures, and their relationships with health (PÖÇ-1).
- Understands the working mechanisms of enzymes and their importance in food systems (PÖÇ-1).
- Evaluates the biological effects of alcohols and alkaloids and their presence in foods (PÖÇ-1).
- Analyzes the purposes of use and the safety aspects of food additives and flavoring substances (PÖÇ-6).
- Identifies naturally occurring toxic substances and contaminants in foods and interprets their risks (PÖÇ-6).
- Discusses the possible effects of chemical components in terms of food safety on a scientific basis (PÖÇ-6).
- Makes critical and holistic evaluations by using fundamental concepts related to food components.
